Breakfast Burritos Aren't Just for Breafast


This week at Harris Teeter just screams breakfast burritos.  If this meal cost me any more than $1.50 I would be very surprised.  You can't even get one fast food kid's meal for that, let alone feed a family of 4.  The great thing about breakfast burritos is that you can stuff those little tortillas with just about anything you want.  I was in a hurry, so my creative juices weren't really flowing, but the possibilites are nearly endless.

I read somewhere that the perfect ratio of milk to eggs for scrambled eggs is 1T. milk and dash of salt to 1 egg.  So, that's what I did.  Then on top of a warmed tortilla, piled eggs, cheese, salsa and sour cream (with a little mexican dip mix stirred in).  Rolled them up and topped with extra salsa and sour cream, and voila, you've got yourself a meal.  The next time I make these, I will definitely add some black beans, for a bit more color and added "depth" (if that is a cooking term) of flavor.  Enjoy!

Crunchy Flaky Chicken

In my never-ending quest to use the sour cream in my refrigerator, I have continued to search for other good grocery deals that I can pair with this creamy goodness.  I hope you were able to take advantage of the past chicken deal at Harris Teeter, but if not, short-dated chicken is always a great alternative.  Check with the folks in the meat area at your store and find out when they do their markdowns for the day.  The chicken used for this recipe I got for $.57 per pound - you can't beat that.  I may have spent a total of $8 for all of the ingredients for this entree and have been able to get several meals out of it for my family of four.  Okay so let's get to it...


Crunchy Flaky Chicken


6 skinless, boneless chicken breasts (3.5 - 4 lbs.)
2 c. sour cream
1 packet dry ranch dressing mix
8 oz. crushed Corn Flakes cereal
1 t. Italian-style (I used Pampered Chef, but there are lots of others out there)
1/2 t. garlic salt
1/2 t. onion salt




1.  Preheat oven to 350 degrees F.


2.  Combine ranch dressing mix with sour cream, set aside.




3.  Rinse and trim off the excess fat from the chicken, then cut into strips (about 1 inch wide).  Dry off any water that may be remaining on chicken.




4. Coat chicken strips in sour cream mixture, making sure all sides are covered and place on tray.  Refrigerate for 2 hours to set up sour cream for easier dredging in corn flakes.





5.  Put corn flakes in a ziploc bag and crush into very small flakes.  (You will get a better result if you don't crush them in the food processor.  They get a little too fine, and in turn, are not quite as crisp after baking).  In bowl, mix corn flakes, Italian seasoning, garlic salt and onion salt.



6.  Dredge refrigerated chicken in corn flake mixture and place on lightly greased jelly roll pan (we actually needed two pans, but that will depend on how thick you cut the chicken strips).




7.  Bake in preheated oven for 30 minutes, or until chicken is no longer pink in the middle.  (Again, this will depend on how thick you cut your strips - for very thin strips, reduce cooking time, and thicker strips may require more time.










You can dip these in your favorite sauce for a yummy dinner.  This recipe was a huge hit even with my INCREDIBLY picky daughter.   Enjoy!

Hangin' with My Peeps


This fun cake made use of items that I have in my pantry all the time, plus the added bonus of being able to justify buying extra half-price Easter candy.  I LOVE Peeps.  Nothing says Easter like a sugar-coated chicken!  That is, besides the the joy of  worshiping my risen Savior.  This Peeps Sunflower Cake came from Carolina Country magazine and just screams beautiful weather.  

You will need:
2 boxes of cake mix
2 cans of chocolate frosting
4 packs of Peeps (20 in total)
chocolate chips

I made 2 - 10 inch cakes (I used coconut, but you can use any flavor that goes well with chocolate) and followed the directions on the box.  There are a few tips that may help when trying to make cake decorating a little easier.  Cutting the top off of your cake makes stacking them much easier.  You can use a knife, but if you are like me and not very good a judging what is level, you can find this great little tool that looks like a glorified coat hanger.  The thin wire just cuts through the cake, leaving you with a nice flat cake top.  My other tip is to freeze your cake before icing it (make sure you put waxed paper in between the layers before freezing or you may need a crowbar to get them apart).  The crumbs are a little easier to handle when the cake is firmer.

The next step with the Peeps Sunflower Cake is to ice it, just like you would any 2 layer cake, using 2 cans of chocolate frosting.  Once the cake is frosted, now comes the fun part. Take something small and round (like an apple corer) and gently mark a light circle in the center of the cake - this will help with the chocolate chip step.  I didn't do this and my chocolate chips are a little off center.  Next, leaving the Peeps connected in the row of 5, curve them slightly to go around the edge of the cake.  Now begin putting the chips around the circle that you made in the center of the cake, and bring them out to the edge of the Peeps.  A nice touch might be to use mini chocolate chips in the first few circles in the center, then move to regular size chips.  I didn't have any minis, but I think that would have been more realistic looking.  Voila - you now have a yummy sunflower that takes as good as it looks!

Stuffed French Toast

Triples week at Harris Teeter sent me home with lots of cheap/free bread that is now coming close to the "sell by" date, and I'm not a huge frozen bread fan....  So the dilemma is:  how to use up bread quickly and make a yummy meal out of it?  I decided to give Stuffed French Toast a shot.  The first time I ever had doctored French toast was when we lived in Upstate NY at the Miss Albany Diner.  It was scrumptious, I'm drooling just thinking about it!  Well, this version isn't quite the same because I was using what I had on-hand, but I'd say it's quite tasty.  It's a little sweet, almost like having dessert for breakfast, and I don't know about you, but I'm up for dessert pretty much anytime.

I got to use up some of the deals that I had it the pantry and refrigerator - I'm still plugging away at the sour cream - and hoping as a result I will become smarter and more well-balanced!  Anyway, here's what I did:

Stuffed French Toast

14 slices bread

6 eggs
1 1/2 c. milk
1/3 c. sugar
1T. vanilla

2 apples, peeled, cored and chopped  (you could really use whatever fruit you want - strawberries, blueberries or peaches would be yummy, too)
4 oz. cream cheese, softened
8 oz. sour cream
1t. vanilla
1/2 c. sugar

2T sugar
1 1/2 t. cinnamon
1/2 t. nutmeg

1/2 c. white sugar
1/2 c. brown sugar
1/4 c. flour
1/2 c. butter/margarine
1/2 c. milk
2 t. vanilla

1. Grease 9x13 pan well (I went light on the cooking spray and it stuck to the pan a little).  Place 7 slices of bread in the pan.
2. If you are going to use apples in the filling, you will want to soften them in the microwave for several minutes (timing will depend on the type of apples you use, until a fork can easily be put through - stir every minute or so).  Set aside.
3. In a large bowl mix together the next 4 ingredients (6 eggs, 1 1/2c. milk, 1/3 c. sugar and 1T vanilla) and pour about 1c. of egg mixture over the first layer of bread.
4.  In another bowl mix together cream cheese, sour cream.  Add 1t. vanilla and 1/2 c. sugar.  Spread sour cream mixture all over bread.  Top with chopped apples.
5. Cover apples with remaining bread slices.  Evenly pour remaining egg mixture over the bread slices.
6. Blend together 2 T. sugar, cinnamon and nutmeg.  Sprinkle on top of prepared bread.
7.  Cover and refrigerate overnight.
8.  The next day preheat the oven to 350 degrees F.
9.  Bake covered in preheated oven for 30 minutes, then uncover and bake and additional 30 minutes, until golden brown.
10.  While French toast is baking, prepare the sauce.  Over medium heat, in a small saucepan, melt butter and add sugars and flour, blending well.  Stir in 1/2 c. milk and 2 t. vanilla.  Cook until thick.
11.  Serve French toast hot with warm sauce.  If you want, you could skip the sauce and just use maple syrup.
This was a big hit in my house, and I hope it is in yours.  You can definitely experiment with the filling.  Add more cream cheese for a thicker filling, or maybe omit the apples and substitute strawberries sprinkled with a few chocolate chips for an even more decadent treat.  I'd love to hear what you did to mix it up.  Enjoy!

Have Your Cake Mix And Eat It Too

Last week at Harris Teeter was a good time to stock up on cake mixes, so my pantry is now chock full of them.  Lots of different flavors.  In anticipation of our Easter brunch, I 've been thinking of how I could work a cake mix into the menu.  Then it came to me, nothing says warm weather like lemon.  And since it's 80ish degrees here in NC, and we are so ready to welcome spring, a lemon pound cake seemed just the ticket.


As I had mentioned previously, I still have LOTS of sour cream in my refrigerator, and last week was a super time to get vanilla at HT, it was all coming together.


So here's what I did:


Lemony Pound Cake


1/2 cup butter
1/2 cup sugar
1 3.25 oz box lemon pudding (use dry)
3 eggs
2 t vanilla extract
2/3 cup water
1 1/2 cups sour cream
1 box lemon cake mix
1 cup all purpose flour


1.  Preheat oven to 350 degrees.  Grease and flour 10 inch Bundt pan.
2.  In a large bowl cream the butter, sugar and pudding mix (not prepared, just powder) until fluffy.  Add in eggs one at a time.  Then stir in vanilla and water, followed by the sour cream.  To the liquid mixture add in cake mix and  flour and beat for about 2 minutes.  Pour into the prepared pan.  Batter will be thick.


3.  Bake in oven for about 50 minutes.  The time may vary depending on type of pan you are using (dark like mine, usually takes a little less time, so you may need longer).  The cake is done when the toothpick comes out clean.  Let cake cool for 10-15 minutes in the pan, then remove cake from pan and allow to cool completely.  Pound cake is often better then next day, so if you have the time, make it ahead.


I wanted to add a little fruit on top (so that we could justify eating dessert at 10:30am), but didn't have anything fresh and didn't have time to go get any.  Thankfully, when perusing my pantry I came across a can of boysenberries that I had picked up a while ago at HT.  I wouldn't typically spring for such a treat, but I found this delicious can of berries in the markdown basket.  These berries sell for $3.79 a can, but HT was discontinuing the boysenberry, so I couldn't pass them up for just $.99.  The Oregon Fruit website had a recipe to make a berry sauce, so a few tablespoons of cornstarch and lemon juice later, I had all I needed to eat dessert at 10:30 with a clean conscience!


Here's the final product, with a little Cool Whip ($.99 this week at HT) and a sprig of mint, just for fun.
